Vintage Inn Cinnamon Sugar Mini Muffins
Cinnamon sugar coated donuts are my favorite type of donut. These simple muffins have an extra special crispy edge and taste like a donut hole without the mess of deep frying or air frying – the bake up quickly in a mini muffin pan!

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulate sugar
- 1/8 teaspoon salt
- 1 1/2 tsp baking power
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup milk
- 1/3 cup melted butter
- 1 egg large, room temperature
Topping
- 1/3 cup granulated sugar
- 2 tsp ground cinnamon
- 5 Tbsp melted butter
Instructions
- Preheat oven to 350 degrees. Grease mini muffin pan with spray canola oil.
- Whisk together dry ingredients in a large bowl.
- Whisk together the milk, butter, and egg in a small bowl. Pour over dry ingredients and stir until just moistened.
- Spoon batter into mini muffin pan. Fill each cup about 1/2 to 3/4 full. Bake for 15-20 minutes until light brown. Cool for 5 minutes.
- Dip muffins into the melted butter with a pair of tongs, then roll in the cinnamon sugar mixture.
- ENJOY!
Notes
- Taste great for up to 48 hours when stored sealed at room temperature. You can also bake the day ahead, then dip in melted butter and sugar right before serving to warm them up.
